Tahini
A paste of ground toasted sesame seeds — rich, nutty, and slightly bitter. The base of hummus and a natural partner for lemon and garlic. Also great drizzled over roasted vegetables.
Used for
- hummus
- dressings
- dipping sauces
- roasted vegetables
- grain bowls
In the kitchen
- whisk into sauce
- thin with warm water
- drizzle
Picking it at the store
- Oil separation on top is completely normal — just stir it back in
- Look for brands with one ingredient (sesame) and no added oils; the flavour is far better
