Frozen spinach
Spinach blanched and frozen at peak freshness, usually sold chopped in blocks. Thaw and squeeze out as much water as possible before using — skipping this step waters down whatever you're making.

- thaw completely
- squeeze dry in a towel or cheesecloth
- chop finer if needed
Picking it at the store
- A standard box or bag yields far less volume than it looks — a 10 oz box is only about 1 to 1.5 cups once squeezed dry
- Squeezing out the water is the single most important step; wet spinach ruins dip and filling texture
