Flatbread
Any of a wide family of thin, usually unleavened or lightly leavened breads — naan, pita, and lavash are all specific types. Recipes that just say 'flatbread' usually mean whichever soft, round flatbread is easiest to find.

In the kitchen
- warm briefly in a dry pan or oven before serving
- grill for char and smokiness
- brush with oil before warming for a softer texture
Picking it at the store
- Store-bought naan, pita, or lavash are all reasonable substitutes for a generic 'flatbread' call — pick whichever's freshest at your store
- Wrap in a damp towel while warming a stack in the oven so they don't dry out
