Pumpkin puree
Cooked, mashed pumpkin sold canned — not the same as pumpkin pie filling, which already has sugar and spices mixed in. Plain puree is the base you season yourself.

Picking it at the store
- Double-check the can says '100% pumpkin' or 'pumpkin puree' — 'pumpkin pie filling' is a different, pre-sweetened product sitting right next to it on the shelf
- Homemade puree is wetter than canned — drain it in a strainer before using in a recipe built around canned
