The generic term recipes use when the variety doesn't matter much — button or cremini both work fine unless a recipe calls out something more specific like shiitake or portobello.

  • Skip washing under running water — mushrooms soak it up like a sponge; wipe with a damp towel instead
  • Crowding the pan steams them instead of browning them; cook in batches if needed
