Frozen peas
Sweet green peas frozen at peak ripeness — often fresher-tasting than 'fresh' peas that traveled days to the store. They're blanched before freezing, so a minute or two in hot liquid is enough.
Used for
- stir-fries
- soups
- fried rice
- pot pies
In the kitchen
- add straight from frozen
- blanch briefly
- stir in at the end
Picking it at the store
- No need to thaw first for most dishes — add them frozen directly to a hot pan or simmering liquid
- Skip bags with visible ice crystals or clumping, signs of thawing and refreezing
