Flaky sea salt
Large, light pyramid-shaped salt crystals (Maldon is the benchmark). Used as a finishing salt — scatter a few flakes on a steak, chocolate cookie, or burrata right before serving for crunch and a burst of seasoning.
Used for
- finishing steaks
- chocolate baking
- salads
- eggs
- avocado toast
In the kitchen
- pinch and crumble between fingers
- finish dishes
Picking it at the store
- Don't cook with it — the flakes dissolve immediately in liquid; save it for finishing where the crunch matters
