Evaporated milk
Canned milk with about 60% of its water removed, unsweetened — richer than regular milk but not sweet like condensed milk. Common in pumpkin pie filling and as a lighter cream substitute in sauces.
Used for
- pumpkin pie
- sauces
- fudge
- custards
In the kitchen
- whisk in
- substitute for cream in a pinch
- simmer
Picking it at the store
- Don't confuse it with sweetened condensed milk — they aren't interchangeable, one has no added sugar
- Shake the can well before opening; the fat can separate on the shelf
