Coconut Oil
A tropical plant oil extracted from dried coconut flesh. Solid at room temperature (below ~76°F), liquid when warm. Unrefined (virgin) has a mild coconut flavor; refined is neutral-tasting.

Picking it at the store
- Use refined coconut oil when you don't want coconut flavor (most savory cooking); use unrefined for a hint of coconut
- Measure it melted for accurate volume in recipes; it solidifies in the jar but liquefies quickly when warmed
