Chipotles in adobo
Smoked, dried jalapeños (chipotles) canned in a tangy, slightly sweet red adobo sauce. Both the peppers and the sauce carry heat and smokiness — use the sauce alone for milder dishes, or blend a whole pepper in for more punch.
