Brie
A soft, creamy French cow's milk cheese with a white, edible rind. Mild and buttery when young; more pungent with age. Best served at room temperature when it becomes spreadably soft.

Picking it at the store
- Let brie sit at room temperature 30–60 minutes before serving — cold brie is firm and bland; warm brie is soft and flavorful
- A slightly springy feel when pressed means it's ripe; rock-hard means it needs more time; runny and strongly ammonia-smelling means it's over-ripe
