Active dry yeast
A living leavener for yeasted breads and rolls. Unlike baking powder it produces flavour as well as lift. Always proof first: dissolve in warm (105–115°F / 40–46°C) water with a pinch of sugar — if it foams in 10 minutes, it's alive.
