Nori

Thin, dried, roasted sheets of seaweed — the wrapper for sushi rolls and a crumbled garnish elsewhere. Toasted (yaki) nori is crisp out of the package; keep it sealed since it goes soft and chewy once exposed to air.

In the kitchen

  • keep sealed until ready to use — it softens fast once opened
  • toast briefly over a flame if it's gone soft, to re-crisp it
  • cut with scissors for garnish strips

Picking it at the store

  • Buy 'yaki' (toasted) nori for sushi — untoasted nori is meant for further cooking, not eating as-is
  • Reseal the bag tightly with the silica packet inside; humidity is what ruins it
