- soak in cold water 5–10 minutes to rehydrate
- squeeze out excess water before using
- cut large pieces smaller after soaking — it expands significantly

- A little goes a long way — it expands several times its dry size once soaked
- Store the resealed bag somewhere dry; it absorbs moisture from the air and clumps
